I've thought for a while that the dandelion is a much maligned plant.

Other than the stem, and I'm not even sure about the stem, every part of it is edible.
    The leaves are salad greens.
The heads ferment into dandelion wine.
The root is roasted and ground as chicory coffee.

You can also sautee them like mustard and turnip greens and spinach. Every year after the spring rains my yard erupts with fresh, tender dandeloins and nasturtiums--all edible. Pickled nasturtium seeds are capers.
