    I like chile relleno stuffed with shrimp. Also, beef fajitas with chimichurri. But when I think of summer, I really go for sweet, grilled corn.

    Here's a barBQ chicken recipe that I've developed. Low fat and pretty good:

    5 lbs chicken breast (cut into small pieces, easier when semi-frozen)
    3 cups BQ sauce (use something good without the high fructose syrup)
    Hot chili sauce (the Vietnamese variety)
    Hoisin sauce
    Worcestershire sauce
    Jamaican jerk marinade
    Chili powder
    Black pepper
    meat masala (2 tsp)
    3 onions (chopped and sauteed or fried beforehand)
    Cook on low heat, in an open frye pan or similar (to allow evaporation) for 5 to 8 hrs, turning over and breaking up large pieces of chicken with a spatula until it looks as if shredded.

    Add 1 more cup BQ sauce toward the end of cooking time.
    Experiment with spices to individual taste.
    Feeds lots of people!

    Yes..you should have them there... strange that you don't...they are YUMMY! I get them at our ranch market. I use them in lots of things...omelets, mac and cheese, quesadillas, salads, breakfast burritos....

    My favorite summer salad:
    torn romaine
    sliced cucumbers
    fuji apple slices
    crumbled or chunked spicey cheese (jalapeno cheese curds are the best)
    grape tomatoes
    baby carrots
    cut up smoked ham
    fresh ground pepper
    raspberry vinaigrette dressing
    and a fork
    ...and some iced tea

    eating it right now!

    No problem where I hang out there are a couple of dozen. Of course it's Casera Mexicana and there isn't a Taco Hell within several hundreds of miles.

    Summer Slaw adds finely chopped tomato to the mix. Easy to fix and it isn't the final version of creative hot weather non-cooking.

    It is what I would make for cold weather, though, not for summer (as much as we have 'cold' weather here, in Los Angeles. Stop laughing!). Maybe sprinkle a bit of grated cheddar on top after you take it out of the oven...

    Anytime. I have quite a nice cookbook put together. All recipes my mother used to make. They were fast, fed a family of 5 with leftovers, and perfect for poor people since growing up I was dirt, dirt poor.

    I used to be a chef for a few years, and also have dozen or so of my recipes.

    Agave maybe - will have to research it. I generally use honey (in my coffee) but only a little of it because honey is just 50% fructose + 50% sucrose + lots of trace thingies from the bees...so it engages the same sort of metabolism that cane sugar or corn sugar does.

    But I bet it would taste great even without the sugar!

    Mine is a drink:
    1 part Hendricks Gin
    1 part St Germain liquor
    Grapefuit juice to taste (depending on how many you want to drink)

    Just an awesome refreshing drink!

    This is good + easy.
    Buy a graham cracker pie crust
    Two instant chocolate pudding mix, two cups of milk, half a container of Cool Whip. Mix, pour into pie crust. Let sit until mixture sets. Refrigerate to taste. Top with remaining Cool Whip or whipped cream. Cool, delicious, quick.
