A more potent twist on hot buttered rum...
POLAR BEAR
Serves 8
1 1/4 cups packed golden brown sugar
1/2 cup, (1 stick), unsalted butter, room temperature
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg, freshly grated if you have the pods and small grater
1/2 teaspoon ground cloves
1/2 vanilla bean, split lengthwise

4 cups water
1 1/2 cups DARK rum
1 1/2 cups brandy
8 cinnamon sticks

Place brown sugar, butter, cinnamon, nutmeg and cloves in food processor. Scrape in seeds from vanilla bean. Process until blended. * DO AHEAD: Butter mixture can be made 1 week ahead. Wrap in plastic and chill.
Bring 4 cups of water to boil in large saucepan. Add rum, brandy and butter mixture; stir until butter melts. Ladle into mugs and garnish with cinnamon sticks.

Glad you knew when to say enough. That's a big part of it. My father in law has type 2 and really watches his diet. I do too, when he is visiting. I try to make things that are protein high and carb low. Which I do anyway for our general well being. :-)

That was nice. I have a brother who is Type 1.
Tell your friend that a dino says hi.
I've been reading a book about what someone like me should eat and not eat. But I still lived it up a little on Thanksgiving of all days. I could have lived it up a lot. The stuff was there.

My BFF uses this to make her hot buttered rum. I use about twice that much cinnamon. The spice butter is also amazing on fresh, hot bread.
