Salt-loving potato a breakthrough

The prestigious USAid grand challenge went to a team of Dutch researchers last week, for a food crop that was developed the old fashioned way. The team’s potato has one very simple adaptation: it can tolerate a high concentration of salt. It’s by no means the only plant that can do this, but unlike others it may just be the first dense source of carbohydrates that can.

    Think of the money McDonald's would save by no longer having to salt their french fries...
